Bite Sized Protein

Coming up with protein ideas for multiple meals a day can be a challenge, particularly as they relate to snacks. So many of us have been in the habit of reaching for a little sugary treat by mid-afternoon to help perk up our energy levels.

Unfortunately, 30 minutes after we opt for a sugary snack, it’s pretty common that energy levels plummet and we find ourselves more fatigued than ever.

Therefore, in the spirit of it being the fall, and in light of the constant barrage of pumpkin inspired treats from Tim Hortons and Starbucks tempting up when we feel a sugar urge come on, why not try this instead: the Pumpkin Cheesecake Bite!



Pumpkin Cheesecake Bites

1/2 cup greek yogourt
2 large eggs
1 cup canned pumpkin
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup Splenda or Stevia

 

Directions

Preheat oven to 350°F. Add all ingredients into a blender and beat until smooth. Pour mixture into mini muffin cups or 8″ x 8″ pyrex baking dish. Bake ~30-35 minutes or until middle is set and outside is lightly browned.

Remove from oven and allow to cool.

Makes 16 mini cheesecakes.

Nutrition info (per piece): 33 kcal, 1 g fat, 3 g carbohydrates, 3 g protein.

Incidentally, three pieces of this recipe come out to exactly 100 kcal… now there’s a real 100 Calorie snack worth indulging in!
